Nothing goes over better at a summer barbecue than my dad’s grilled salmon.
The marinade of simple, healthy ingredients pleases any palate, and a tender, fresh piece of fish is a fun change of pace during the beef-dominated grilling season.

Ingredients
1½ pounds salmon fillet or steak
2 cups warm water
½ cup brown sugar
3 tablespoons salt
3 tablespoons olive oil
3 tablespoons lemon juice
2 tablespoons lime juice
Preparation
1. Mix water, brown sugar, salt, olive oil, lemon juice and lime juice in a mixing bowl. Pour into large plastic storage bag. Put fish in plastic bag and refrigerate overnight. Brush oil onto unlit grill to prevent fish from sticking.
2. Grill fish for 5 to 7 minutes each side. Serve with couscous and salad, for two.
