Ingredients
2 2-pound packages red kidney or yellow eye beans
2 cups sugar
½ large onion
½ large chunk salt pork
½ tablespoon dry mustard, to taste
3 ounces molasses
Salt and pepper, to taste
Preparation
1. Cover beans with cold water and soak overnight. Drain off excess water. Preheat oven to 350°F. Place beans and remaining ingredients in a Dutch oven; stir.
2. Add enough water to just cover beans. Bake for 8 hours. Check every few hours, adding water as necessary to keep beans covered.
