Our neighbor, Layna Rizzo, shared this recipe for a traditional holiday treat with my daughter, Rachel, in the process of introducing her to Italian cuisine.
Ingredients
6 eggs (large) |
1 ½ c. sugar (granulated) |
1 c. vegetable oil (like canola, not olive oil) |
1 Tbsp. anise extract |
1 Tbsp. vanilla extract |
2 c. flour |
1 small handful of anise seeds (according to taste preference) |
Preparation
1. In a large bowl, whisk together the eggs. Add the oil, anise extract and vanilla extract and continue whisking. Then add the dry ingredients gradually: sugar, flour and anise seeds. Mix all the ingredients thoroughly.
2. Heat the pizzelle iron (these irons are readily available at many retail outlets, online and bricks-and-mortar) until it is very hot and ready. Pour two tablespoons of the batter into the iron, close it, and let it bake for the time it takes to say three Hail Marys (approximately 30-45 seconds) or until golden brown. With a fork, gently remove each pizelle and let it cool on a baking tray. Repeat until all the batter is used.
Makes about 60 pizzelles.
