In the famous Jonas family, this rice pudding is a recipe that guarantees quality family time.
Ingredients
½ cup sugar
2 tablespoons cornstarch
Pinch of salt
2¼ cups whole or low-fat milk
3 large eggs, slightly beaten
2 tablespoons unsalted butter
2 teaspoons pure vanilla
1½ cups cooked rice
ground nutmeg
Double boiler pan is needed
Preparation
1. Add water to bottom of double boiler to waterline; place on medium heat to bring to a boil.
2. Set the top pan on the counter and place the sugar, cornstarch and salt in the pan and blend well.
3. Add milk and eggs and mix until smooth with no lumps; add butter.
4. Set the pan on top of the pan with the boiling water. Stir to thicken with a wooden spoon. Lower heat slightly as liquid begins to thicken (as butter melts, the liquid becomes thick around the edges.)
5. Stir constantly about 10 minutes, being careful to not let pudding stick.
6. Gently mix in vanilla and then fold in cooked rice (rice should be warm when added to the pudding mixture).
7. Sprinkle with nutmeg, cover, turn off heat and let set for about 10 minutes. Serve warm with whipped cream on top.
