Over the weekend, I followed some advice from Guideposts.org readers. I bought extra hamburger and sausage with dinner recipes in mind.
I made three pounds of taco meat on Friday, which only lasted one meal because my son came home from college (big appetite) and Jacob’s best friend was visiting. I made my own creation last night—breakfast/dinner casserole where I threw together hash browns, browned sausage, eggs, and cheddar jack cheeses. Everyone loved it! Everyone had seconds so that’s two dinners where I did not have any leftovers!
It is so much fun to have everyone gathered at the dinner table at the same time! The dinners were easy and delicious. I sifted through my one-pot and casseroles books for more ideas and so far haven’t gotten my girls to make a dinner yet. I love the ideas from folks reading the blog and I’m planning on trying some of the new recipes this week!
I need a crock-pot or casserole dish that guarantees two dinners. We have programs after school this week as well as two sport events so it needs to be quick and easy!
