The host of the Food Network’s Diners, Drive-ins & Dives shares some of his burger expertise with Guideposts readers.
Ingredients
2 lbs. ground chuck
¼ lb. bacon, cooked and chopped
½ c.p red onions
3 Tbsp. chorizo, Mexican fresh style
½ lb. Swiss cheese, thinly sliced (8 slices)
Salt and pepper to taste
4 Kaiser rolls, split and toasted
Preparation
1. Divide ground chuck into 8 equal parts. Form each into a loose ball then create a 4-inch patty. Set aside.
2. In pan over medium-high heat, add bacon and onions; cook till ¾ done, then add chorizo and cook till done. Season with salt and pepper. Place on paper towel to cool.
3. Layer 1 piece of cheese onto center of one patty, add ¼ bacon mixture, top with 1 slice of cheese, then add another patty on top and gently seal edges; form into a patty 4 inches wide by 1½ inches high. Repeat with remaining patties.
4. In medium sauté pan over medium heat, add all 4 stuffed patties; cook for 3 to 4 minutes on one side, gently turn over, cook for 3 to 4 minutes, then remove pan from heat, cover and put into 250°F oven for 10 minutes. Serve on Kaiser rolls.
