Traditional Zimbabwean Meal

Learn to cook the favorite recipe of a family who brings hope to orphans in Africa.

Our family travels often to Zimbabwe, where we bring hope to children orphaned by AIDS.

The people share their best with us, preparing food over an open fire as we sit together on the floor of a smoky cooking hut. Back home, when we enjoy a traditional Zimbabwean meal, we are reminded of the graciousness of the Zimbabwean people—and how God always provides for us when we give to others.

Traditional Zimbabwean Meal:

Ingredients

1 28-ounce can diced tomatoes

hot sauce

cayenne pepper

4 boneless, skinless chicken breasts

1 cup brown rice

2 pounds fresh kale or other greens, chopped

¾ cup peanut butter

Preparation

1. Spice up diced tomatoes to taste with the hot sauce and cayenne pepper. Salt and pepper chicken to taste and place in Pyrex baking dish. Pour spiced tomatoes over chicken and bake uncovered for 30-45 minutes at 350 degrees.

2. Prepare rice while chicken bakes.

3. Ready a large frying pan. Spoon most of the tomatoes and liquid from the cooked chicken into the pan,add chopped kale and cook covered on medium heat until tender. As kale cooks, stir the peanut butter into the hot rice.

4. Place chicken on plate garnished with remaining tomatoes; add “kale relish” and rice to the plate. Serves four.
