Ingredients

2 packages active dry yeast

A little less than 1 cup warm water

2 cups milk, scalded then cooled to lukewarm

3 tablespoons sugar

3 tablespoons shortening

1 tablespoon salt

7 to 9 cups all-purpose flour

1 stick salted butter, softened

Preparation

1. In large bowl dissolve yeast with warm water. Add milk, sugar, shortening, salt and 5 cups flour. Stir till smooth. Mix in enough flour to make dough easier to handle (it shouldn’t be soggy).

2. Turn onto lightly floured surface and knead (stretching and rolling dough in place) till smooth and somewhat elastic (about 8 minutes). Place in greased bowl, rolling dough so greased side is up. Cover with dish towel. Let rise in a warm place till size doubles (about an hour).

3. Punch dough down once, then divide in half. Put each half in a greased loaf pan, rolling edges under to form smooth top. Lightly brush tops with butter and cover. Let rise about an hour and preheat oven to 425°F.

3. Place loaves on low rack in center of oven. Don’t let pans touch. Bake till bread turns golden brown, 25 to 30 minutes. After removing from oven, brush tops with butter again. Cool slightly and run a knife inside pan edge to unstick. Remove loaves and cool.

Makes 24 slices
