Yams are a traditional Thanksgiving side dish for most of us, and here’s one entry in a family’s recipe throwdown.
Ingredients
2 large (29-oz.) cans sweet potatoes | 2 c. light brown sugar |
1 8-oz. can crushed pineapple (undrained) | 1 10-oz. bag miniature marshmallows |
Ingredients
1. Preheat oven to 350°F. Lightly spray a 9-by-1 1-inch glass baking dish with non-stick cooking spray.
2. Drain the sweet potatoes and place in a large bowl. Use a mixer to beat the potatoes until they’re smooth. Add pineapple and brown sugar; beat well.
3. Pour into dish, spreading potatoes evenly. Bake for 20 minutes.
4. Remove from the oven and cover potatoes with marshmallows. Return to oven and bake till marshmallows are golden brown, about 10 minutes.
