A great alternative to French fries—and packed with beta-carotene!
Ingredients
Sweet Potato Fries
1 pound unpeeled sweet potatoes (about 2 small)
¼ cup extra-virgin olive oil
1 teaspoon kosher salt, and more for seasoning
Lime Dipping Sauce
⅓ cup mayonnaise
½ teaspoon finely grated lime zest
1 tablespoon fresh lime juice
½ teaspoon minced garlic
Pinch of kosher salt
Preparation
1. Preheat oven to 475°F.
2. Line a rimmed baking sheet with parchment paper. Cut sweet potatoes crosswise on a slight diagonal into 3/8-inch slices. Cut each slice lengthwise into ¼-inch-wide sticks (about 2 inches long).
3. In a mixing bowl, combine with olive oil and salt. Spread sticks out in one layer on baking sheet, scraping all the oil and salt from the bowl onto them. Roast for 20 minutes. Flip sticks over and continue cooking, flipping once or twice more, until fries are nicely browned, about another 10 minutes.
4. To make sauce, combine all ingredients in a small bowl, whisking well to blend. Let sit for 10 to 15 minutes to let flavors marry.
