These muffins are, in the words of Marilyn Bush, “healthy, delicious and downright good for you!”
Ingredients
2 c. ripe bananas, mashed | 1 tsp baking soda |
1 c. sugar | 3 Tbs buttermilk |
2 eggs | ½ tsp vanilla |
1 c. melted butter | ½ c. chopped pecans or walnuts |
2 c. plus 1 Tbs flour |
Preparation
1. In a large mixing bowl, stir bananas, sugar and eggs until creamy and well-mixed.
2. Add flour, soda and butter; stir well.
3. Add buttermilk, then vanilla, then nuts, stirring well after each.
4. Pour into 12-cup muffin pan. Bake in 350° oven for 20 to 30 minutes or until toothpick inserted into center of muffin comes out clean.
Makes 12 muffins.
