Ingredients
1 c. light brown sugar | 1 tsp salt |
1 c. white sugar | 1 tsp baking soda |
7 Tbs soft butter | 1½ c. dry oatmeal |
½ c. Crisco shortening | 1 c. coconut flakes |
2 eggs | ¼ c. chopped walnuts |
1½ tsp vanilla | ¼ c. chopped pecans |
1½ c. flour |
Preparation
1. In a large mixing bowl, cream together the sugars, shortening, butter, eggs and vanilla.
2. In a smaller bowl mix flour, salt and baking soda, then add to sugar mixture and beat about a minute longer.
3. In a large stainless steel bowl, mix the oatmeal, coconut and nuts. Add creamed mixture to dry mixture and mix well.
4. Drop large tablespoonfuls onto a greased cookie sheet. Bake at 350 degrees for about 12 to 15 minutes.
Makes 18 cookies.
